Olives are technically classified as fruits of the Olea europea tree (a tree that lives for hundreds of years) we generally think about olives not as fruit but as a zesty vegetable that, are harvested in September but available year round, and make a perfect addition to a variety of salads and dishes; in Greece and Cyprus they are typically eaten by themselves as a snack accompanied with crusty bread or as drinks snack.

In Cyprus Green olives are stored and served in a mixture of Olive Oil, Lemon Juice, Crushed Garlic and coriander seeds
